1 (18 1/2 ounce) box Duncan Hines moist deluxe devil’s food cake mix

3 1/2 oz instant chocolate pudding mix

1/2 cup chocolate chips

4 eggs

3/4 cup vegetable oil

1 1/2 cups sour cream

3/4 cup Kahlua

4 tablespoons powdered sugar

3/4 cup chopped walnuts, divided

Preheat oven to 350 degrees.

Grease or Butter Bundt Pan

Mix all ingredients well in a large bowl.

Pour into a greased, 12-cup bundt pan Add 12 walnuts to top of cake and bake until a toothpick inserted in the middle comes out with crumbs clinging to it – about 45 minutes.

Cool in pan and serve on a platter with powdered sugar lightly sifted over the top. YUMMY!

Raspberry White Chocolate Cake With White Chocolate Cream Cheese Frosting

6 oz white baking chocolate
1 stick butter
1 pkg (18.5 oz) white cake mix
1 cup milk
3 eggs
1 tbsp Raspberry extract
2 to 3 drops red food coloring
1 cup fresh raspberries, optional

Microwave white chocolate and butter in a bowl, stirring every 15 seconds until blended. Cool slightly.

In a large mixing bowl, mix together the cake mix, milk, eggs, raspberry extract, and the butter mixture on low speed of electric mixer until moistened. Increase speed to medium and beat two minutes or until well blended. Pour batter evenly into two greased and floured 9-inch cake pans. Bake at 350 degrees for 35 minutes or until a wooden toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes then remove from pans to wire racks to cool completely.

FROSTING:
8-oz cream cheese
1/4 cup stick butter
6-oz white baking chocolate, melted
2 tsps raspberry extract
2 cups powdered sugar

Beat cream cheese and butter in a large mixing bowl on medium speed until well blended. Add while chocolate and raspberry extract; mix well. Gradually beat in powdered sugar until light and fluffy.

To assemble:
Take 3/4 cup of the frosting and add the red food coloring from the cake ingredients. Mix until the color is well blended. Take 1 cake layer and place in the center of the serving plate. Top the cake layer with the tinted frosting, spreading evenly. Place the other layer over top of the frosting. Frost top and sides of the cake with the remaining frosting. If desired, arrange fresh raspberries around the top edge of the cake and around the bottom. Or put a few berries on the top in the center.

Flourless Chocolate Cake Recipe

 Ingredients:

9 ounces unsalted butter, diced
9 ounces of dark chocolate (approx. 50% cocoa solids), broken into pieces
5 medium eggs, separated, whites from the yolks
9 ounces of sugar
1 Tablespoon of water

Glaze or Ganash:
5.25 ounces of dark chocolate, broken into pieces
2 Ounces of Heavy Cream
2 Tablespoons brandy

Garnish:
4 Ounces of powdered sugar and a sifter for dusting , and a doily to use as the mold for dusting a design on top of the cake
1 Sprig of Mint for the top as garnish

Directions for making the no bake chocolate cake recipe:
Preheat the oven to 325 for a gas oven, and 350 for an electric oven. You will need a 9″ cake pan with a removable base, to add the cake mixture to before baking. In a pan over a double boiler you will melt the chocolate, and the butter, stirring often, and be careful not to burn. Once it is totaly melted remove from the double boiler, and wait to add the rest of the mixtures below as follows.

In a separate bowl you will whisk the egg yolks with half of the sugar for a few minutes until the egg yolk and sugar mixture is a pale yellow. This is done to make sure that the egg yolks are cooked, and the sugar is melted.

In a separate bowl you will whisk the egg whites with the other half of the sugar until they reach stiff peaks. When you have finished whisking you should have what is called a meringue, and it should be stiff and shiny.

You will then start to fold in the semi cool chocolate, and butter, into the yolks egg mixture, then the egg whites, you will do this in 1/3’s on each mixture. Make sure to fold in and not mix. You do not want to overwork, if you do the cake will be very dense instead of light and fluffy. Pour the mixture into the prepared tin and bake for 25-30 minutes, or until done, when a tooth pick is inserted in the center, and comes out clear.

When the cake is cooked until done, you will remove the cake from the oven. You will then take a knife and insert it, and run it on the inside of the cake mold, and the outside of the cake. You are clearing the sides from the ring mold, and leave it to cool in the tin, on a wire rack. The wire rack will help air to circulate on the bottom so it will cool evenly, and it will cool somewhat faster. It will also help eliminate a soggy bottom, or center. The sides of the cake may shrink in some, or maybe even quite a bit that will be okay. You can trim the cake if you like, if the appearance is not an issue, that is all good, too.

While the cake is cooling melt the ganash, or glaze over a double boiler. You will do this with the chocolate, and the heavy cream stirring over a low to medium heat until all is melted. You will then add your Brandy and stir. You will then remove the cake ring or cake collar while leaving the cake on the base, place it on a plate or cake board. Trickle the icing over the top and edges, allowing it to run over. You will set the cake in a cool place or on a cooling rack for several hours for the icing to set.

Before you are ready for service you will use your doily at this time to make a pattern that you desire, and dust lightly over it, to make a design on the top of your cake. Do not touch the doily to the top of the cake just place about an inch or two above the top of the cake. Add your mint spring atop of the cake for the finishing touches. This cake can be served several hours after it has totally cooled, or you can chill it in the fridge and serve the next day if you so desire. Enjoy

Step#2. Now take a large bowl, mix all the ingredients. Shake the bowl well, shake it again, untill you feel like it’s mixed properly. (you can also add spices, according to your taste. If you want to.)

How to Prepare Panini Sandwich

Panini sandwich has acquired a great place in the wide range of sandwiches and is very popular. It is normally an Italian sandwich but famous all over as a new and trendy sandwich of this age. Rich, Moist Chocolate Cake Recipe

For this wonderful recipe, I recommend a good dark chocolate with at least 70% cocoa solids because it gives a more chocolatey, fuller flavour to the chocolate cake. Green & Blacks chocolate is my favourite for this chocolate cake recipe.

Ingredients:

For the chocolate cake:
200g Green & Blacks dark chocolate, broken into small pieces
200g light muscovado sugar
140g butter, softened
5 eggs, separated
100g plain flour
1tsp baking powder

For the chocolate cake icing:
250ml double cream
55g marshmallows
250g Green & Blacks dark chocolate, chopped

Directions:

  1. Heat the oven to 180°C/350°F/Gas Mark 4.
  2. Line a 20cm loose based cake tin with greaseproof paper.
  3. Boil a pan of water and turn the heat down to a simmer.
  4. Put the chocolate pieces into a bowl and melt it over the pan of simmering water.
  5. When all the chocolate has melted, put it to one side to cool a little.
  6. In a large bowl beat sugar and butter together until light and fluffy.
  7. Add the egg yolks one at a time and beat them well as you add them.
  8. Gently fold in the flour and baking powder, then stir in the melted chocolate.
  9. In a separate bowl whisk together the egg whites until they form peaks.
  10. Fold the egg whites gently into the chocolate cake mixture.
  11. Tip the finished cake mixture into your ready prepared cake tin.
  12. Bake in the oven for about 35 minutes.
  13. Check it’s ready with a skewer, if it comes out of the cake clean then it’s ready, if not then bake for a little longer.
  14. Cool on a wire rack.

For the icing, heat together the cream and marshmallows until the cream is just boiling and all the marshmallows have melted into the cream, you must stir the icing all the time.
Add the chopped chocolate to the mixture and stir until it’s smooth and creamy.

Chop your cooled chocolate cake in half horizontally and spread over a little of the icing. Sandwich together and then spread the rest of the icing over the top of your cake.

Mozzarella/Bologna and Fool Me Tofu Egg Salad Sandwiches Recipes

4 whole-wheat English muffins

2 tsp butter or margarine

1/2 lb Mozzarella cheese, sliced

4 lettuce leaves, washed and dried well

Split English muffins.  In a 10-inch skillet over medium heat, melt butter or margarine.  Put English muffin lower halves in skillet, split side down.  Cook until golden.  Remove to plate and repeat process with the upper halves.  Mix mayonnaise and pickle relish together in a small bowl.  On lower halves of muffins, arrange bologna and cheese slices on the cut sides.  Cut to fit.  Spread mayonnaise mixture over cheese and bologna.  Top with the top halves of the muffins.  Return sandwiches to skillet and brown over medium heat.  Serve on a lettuce leaf.

FOOLED ME TOFU EGG SALAD SANDWICHES

1/4 cup chopped celery

2 green onions, chopped

1/4 cup mayonnaise

1 tbsp sweet pickle relish

1 tbsp dill pickle relish

1 tbsp Dijon mustard

1/4 tsp ground turmeric

1/4 tsp salt, optional

dash of fresh ground black pepper

1/8 tsp cayenne pepper

1 pkg (12.3-oz) silken firm tofu, cubed

8 slices whole-wheat bread

4 lettuce leaves

In a small bowl, combine the celery, green onions, mayonnaise, pickle relishes, Dijon mustard, turmeric, salt (if using), and black and cayenne peppers.  Gently stir in the tofu.  Spread mixture over four slices of bread.  Top each with a lettuce leaf and add the remaining bread slices.

Ingredients:

    • bread
    • pizza sauce

    • cheese
    • butter

Directions: 1. Get 2 pieces of bread and spread sauce on one piece. Do not get it on the edges or it will not seal very well. 2. Then place your cheese slices on the top of the sauce. 3. Place pepperoni or whatever toppings you desire on the cheese. 4. Place the other piece of bread on top like a sandwich. 5. Spread butter lightly on both sides of the sandwich. 6. Place the sandwich in the sandwich maker grill and cook.

The pizza sandwiches will be very hot inside, so allow to cool for 3-5 minutes.

Ingredients:

    • fruit pie filling
    • bread
    • cinnamon
    • butter

Directions: 1. Take 2 pieces of bread and put a couple tablespoons of pie filling on one of the slices. 2. Place the other slice on top like a sandwich. 3. Spread a light amount of butter on each side of the sandwiches. 4. Sprinkle a small amount of cinnamon on the out side of the sandwich. 5. Place sandwiches in the sandwich maker grill and cook.

Be sure to let it cool as it is very hot inside and enjoy your desert pies!

The wooden salad bowl could either be pre-finished or hand finished. Pre-finished wooden salad bowls already have a varnish applied to it. Water is repelled and that preserves the quality of the wooden salad bowl. The Naming Of The Sub Sandwich At An Italian Deli

As owners of an Italian Deli and Catering business, we’re constantly trying to improve upon our existing menu
and come up with new items for our lunch and catering menus. The deli and catering business is fun, but it can be challenging as well.

We are mostly  known for our sub sandwiches which have garnered us a “Favorite Italian Deli” title and a mention in the Chicago Sun-Times newspaper food critic’s column. Trying to come up with catchy or clever names for our sub sandwiches hasn’t been easy, therefore we have taken to naming our subs for literally what they are: The tuna salad sub, the chicken salad sub, the turkey sub, the ham & cheese sub, the salami sub, the corned beef sub, the capicola sub, the prosciutto sub, the roast beef sub and the veggie sub.

However, four of our subs were given monikers for which aren’t so obvious: Our favorite, “The Nooch” Sub
which consists of Ham. Capicola, Cotto Salami, Provolone Cheese, Mozzarella Cheese, Mild Giardiniera, Lettuce, Tomato and our House Italian Dressing was named for our daughter Stephanie, who is lovingly called “Stephanooch” or “Nooch”, The “Bada Bing” Sub which consists of Prosciutto, Capicola, Provolone Cheese, Scamorza Cheese, Hot Giardiniera, Tomato and Lettuce, The American Sub named for American lunch meats and cheeses – Ham, Turkey, Bologna, American Cheese, Lettuce, Tomato and Mayo, and The Albano Italian Subs – Our “Namesake Sub” which consists of Capicola, Mortadella, Genoa Salami, ham Provolone Cheese, Mozzarella Cheese, Lettuce, Tomato and our House Italian Dressing.

We did come up with the “Presidential Sub”, but it was quickly nixed by our “marketing person”, (daughter) only to be replaced with “The American Sub”. Ordering the “Presidential Sub”, according to her, would be “sooo weird”. And so it goes – our continuous quest to come up with names for our delicious award winning subs that don’t sound “weird”. Hmm, let’s see. Our daughter is a high school cheerleader. How about “The Cheerleader Sub”.  Weird?  Affirmative.

This leave us to the “Build Your Own” sub where our customers can choose their own breads, meats, cheeses and toppings. The mentality here is “you create it, you name it”.  Simple.

Recipe for Fruit Salad with Mint

This colorful salad is light, not too sweet, and delicious.

What You Need

  • 1 pint strawberries, sliced
  • 1 pint blueberries
  • 1 mango, peeled and cubed
  • 1 peach, peeled and cubed
  • 1/8 cup simple syrup (see instructions below)
  • 1/4 cup lime juice
  • 1/2 cup fresh mint, chopped
  • 1/8 teaspoon almond extract

How to Make It

Make a simple syrup by combining 1 part water and 1 part sugar in a sauce pan. Bring the water to a boil, stirring in the sugar until it dissolves completely. Remove from heat and let it cool while you prep the fruit.

Wash all the fruit. Peel and chop as necessary.

In a blender, mix the simple syrup, the lime juice, the mint, and almond extract.

Pour syrup over fruit and toss it all until thoroughly coated.

Chill the salad before serving. Overnight is best, but an hour or two is sufficient.

Makes 10 1/2-cup servings.

A Fancy Twist On Chocolate Cake Mixes

Today, we all lead very busy lives and don’t have hours to spend in our kitchens baking cakes.

When I am pressed for time and need a nice dessert cake, I will reach for a box of chocolate cake mix. I don’t bake just plain cakes, I like to add things to them to make them ‘extra special’.

Cake Baking Tips:

1. Invest in a cake tester. You can pick up one for less than $6.00 at most kitchen stores.

2. Don’t over bake your cakes. I tend to remove my cakes from the oven 3-4 minutes before the recommended time because they will continue baking in the cake pan.

3. Don’t grease and flour your baking pans unless the recipe calls for it.

4. Always let your cakes cool before frosting them.

Here are some recipes that you can easily make from a box of cake mix.

Chocolate Surprise Cake

1 chocolate cake mix
3 oz. box of cherry flavored gelatin
1 c. boiling water
1 c. 7-Up soda
1 box instant pudding mix, any flavor
8 oz. tub of cool whip

Prepare chocolate cake according to package directions. When cool, poke holes on top of cake with a fork. Dissolve the cherry gelatin in boiling water and add the 7-up. Pour over cake. Whip together the instant pudding mix and milk. Fold in cool whip and use this to frost the cake.

Triple Chocolate Cake

1 box chocolate cake mix
1 3/4 c. milk

1 box instant chocolate pudding mix
2 eggs
12 oz. chocolate chips

Combine all ingredients, mix by hand until well blended for about 3 minutes. Pour into greased and floured bundt pan. Bake at 350 degrees for 55 minutes or until cake is done. Do not over bake! Cool and then remove from pan.

German Chocolate Thunder Cake

1 box German Chocolate cake mix
14 oz. can of sweetened condensed milk
1 jar hot fudge ice cream topping
16 oz. tub of cool whip
2 heath candy bars

Bake cake according to package instructions. Let cool for 35 minutes. Poke holes in cake with a fork. Pour sweetened condensed milk over cake and spread evenly. Wait for 5 minutes. Spread fudge topping over cake. Wait another 5 minutes. Spread cool whip over cake and sprinkle crushed candy bars over the top.

Turtle Chocolate Cake

1 German Chocolate cake mix
3/4 c. margarine
1/2 c. evaporated milk
14 oz. bag of caramels
1 c. chopped pecans
6 oz. chocolate chips

Mix cake according to directions. Pour half of the batter into 9 x 13″ pan. Bake at 350 for 20 minutes. Melt milk, margarine and caramels together. Pour over hot cake. Add pecans and chocolate chips on top of caramel mixture. Pour rest of batter over cake. Bake for 20 minutes, or until a toothpick inserted in the top layer comes out clean.

Health & Safety Code Requirements of a Salad Bar or Buffet Display

Except for the high end establishments, just about every type of restaurant these days has some form of customer self-service buffet or salad bar serving ready-to-eat foods. Even El Pollo Loco and other Mexican style restaurants allow you to pick and fill up from a choice of salsas. Asian style all-you-can-eat restaurants are another big one with many popping up in most big cities. Then there are of course the restaurants that focus entirely on buffets and salad bars.

The health and safety laws governing these displays have developed over the years to address the uniqueness of this type of set up and some of the unique hazards or risks to consumers. Noted below are most of those requirements as well as my own recommendations from years of experience inspecting restaurant buffets and salad bars:

–One obvious requirement is that all open exposed ready-to-eat food must be shielded so as to block a direct line between the customer’s mouth and the food on display. This shield is generally known as a sneeze guard for the larger displays of food and is usually glass or transparent plastic, angled above the food enough to block possible contamination coming from a customer’s mouth (saliva from sneezing, coughing, talking, etc.). The shield can also take the form of a container with a tight fitting securely attached lid, normally with hinges. If there is no evidence of a shield or lid then the display is most likely not approved and should be avoided.

–A separate utensil with a handle is required for each food displayed for self-service. No customer is allowed to touch any of the exposed food with their hands.

–There must be clean plates and other tableware at or adjacent to the buffet or salad bar and customers should be reminded, or notified if need be, that only clean tableware is to be used when returning to the buffet.

–The proper temperatures must be maintained. The food is usually displayed on ice (and actually should be buried in ice), or the containers are sitting either in a refrigerated unit or warmer, or the food is sitting under a heating lamp. Look for steam coming from the warmer or steam table and even the food itself. Do not trust a chafing dish for long term holding (more than 2 hours) of foods. You will generally only see chafing dishes at a temporary buffet setting. They are large shallow metal platters with one or two canned gas lighted flames underneath, attempting to keep the food warm. They are maybe good for short periods of time only, and are not to be trusted or definitely not approved for a more permanent buffet setting. Heat lamps usually fall into this same category. They also are not the best means of maintaining hot holding temperatures for long period of times.

–Employees should be constantly monitoring and maintaining the buffet or salad bar. They should be doing everything from replenishing it to cleaning and checking temperatures frequently.

–No sulfites or sulfiting agents. Sulfites used to be a common preserving agent especially in fruits, maintaining a fresh appearance. Most if not all states prohibit any food facility from applying sulfating agents to fresh fruits and vegetables intended for raw consumption, or to any potentially hazardous foods. Sulfites are still allowed on fruits and vegetables not sold in the raw state, such as dried fruits and grapes used for wine.

–Absolutely no flies or other types of vermin (cockroaches, rodents) can be present. Contrary to what you may have heard, there is no acceptable number or amount of vermin allowed in a food facility. Vermin are strictly illegal in all areas of the establishment. They harbor and can transmit dangerous microorganisms as well as general filth to your food and should not be tolerated.

— No leaking and pooling waste water on the floor area, either from melting ice, or the refrigeration or warmer unit.

–Most foods should have a label identifying the common name of the food, sauce, dressing, condiments etc.

Learning the requirements and potential hazards of a buffet or salad bar is just good consumer awareness and can give you the advantage in preventing a serious food borne illness.

1. Black Bean Salad with Feta Cheese:

Ingredients: 1 can of drained black beans, 1 chopped red bell pepper, 2 chopped green onions, 1 cup finely chopped cabbage, 2 ounces feta cheese, one-fourth cup chopped fresh parsley leaves, 1 minced garlic clove, 2 tablespoons lemon juice, 1 tablespoon olive oil, salt and pepper to taste.

Directions: Mix all the ingredients in a large bowl gently. Cover it and chill for sometime in the fridge. Enjoy this low calorie salad!

2. Corn Salad:

Ingredients: 100 grams fresh corn, 1 chopped onion, 2 tablespoons olive oil, 2 tablespoons vinegar, 2 tablespoons fresh basil, salt and pepper to taste.

Directions: Boil the corn and drain. After the corn has cooled, mix the corn kernels, onions, olive oil, vinegar, salt and pepper according to taste. Cover and keep in fridge to chill. Put in the fresh basil before you serve this salad. This is a simple to make and a low calorie salad recipe. You can add in green or red bell peppers if you like!

3. Cool Cucumber Salad:

Ingredients: 1 cup diced cucumber, 1 diced onion, half cup of diced bell peppers (red and yellow), 2 tablespoon lemon juice, 1 tablespoon olive oil, 2 tablespoons chopped parsley, salt and pepper to taste.

Directions: Mix all the above ingredients cucumber, onion, bell peppers, lemon juice, olive oil, parsley, salt and pepper gently in a large salad bowl. Cover and refrigerate. Eat this healthy salad recipe chilled!

4. Tuna Salad:

Ingredients: 200 grams pasta, half tin of drained tuna, 1 small chopped green bell pepper, 1 chopped tomato, 1 tablespoon vinegar.

Directions: Cook the pasta as per instructions on the packet and drain it. Combine the tuna, tomato, bell pepper and mix well in a large bowl. Add the vinegar and serve! This salad is healthy because tuna is a low fat fish and high in proteins!

5. Beet Salad:

Ingredients: Half cup peeled and shredded beet, 1 cup shredded red cabbage, 1 sliced onions, half grated apple, 2 tablespoons vinegar, 1 tablespoon oil, 1 tablespoon brown sugar, salt and pepper to taste.

Directions: Heat oil in a skillet and stir fry the onions and cabbage till soft. Mix apple, sugar and vinegar together separately and then add this mix to the onions and cabbage in the skillet. Add the shredded beet also. Sprinkle the salt and pepper. Cook for a minute and serve. Another option is to cool and chill in the fridge and then eat.

6. Chicken Salad:

Ingredients: 1 cup cooked bite sized chicken, half cup sliced mushrooms, half cup grated carrots, half cup shredded cabbage, 1 green sliced onion, 1 tablespoon cilantro, 2 tablespoons low fat salad dressing, black pepper.

Directions: Mix all ingredients except green onions in a bowl. Garnish with green onions and pepper. This is a healthy salad recipe.

These low calorie salad recipes for fat loss can be eaten as dinner or lunch or just as a snack. Salads are always healthy, just be careful of what dressing you put on it!

White Chocolate Cake Recipe

 This is a very dense, moist and delicious white chocolate cake – one of my favourites and perfect for Chocolate Week!

Ingredients

For the cake:
310g plain flour
5g baking soda
2g baking powder
3g salt
170g white chocolate, chopped
120ml hot water
225g butter, softened
300g caster sugar
3 eggs
235ml buttermilk

For the icing:
200g white chocolate, chopped
20g plain flour
235ml milk
225g butter, softened
200g caster sugar
5ml vanilla extract

Directions

  1. Preheat the oven to 350F/175C/Gas Mark 4.
  2. Grease two 9inch round cake tins.
  3. In a bowl sieve together the flour, baking soda, baking powder and the salt.
  4. In a small pan mix together the white chocolate and hot water over a low heat until the chocolate has melted and the mixture is smooth, leave to cool to room temperature.
  5. In a bowl mix together the butter and sugar until light and fluffy.
  6. Add eggs one at a time beating well.
  7. Stir in the flour mixture and buttermilk alternately.
  8. Mix in the melted chocolate.
  9. Put the cake batter into the cake tins and bake for approximately 30 minutes.
  10. Use a fork to see if the cake is cooked, if it comes out clean then it’s ready, if it has some batter on it, cook it for a little longer.
  11. When cooked take out of the tins and cool on a wire rack.
  12. For the icing, in a pan, add the chocolate, flour and milk and melt over a medium heat, stirring constantly, until it is thick and creamy. Allow to cool completely.
  13. In a bowl mix together the butter, sugar and vanilla extract until light and fluffy.
  14. Mix in the white chocolate mixture and beat until it’s thick and creamy.
  15. Spread  between the two layers of cake and over the top and sides of the cake.

There you have it, your delicious, white chocolate cake. Enjoy!

Instead of sweating away for hours at the gym, they like to walk everywhere they go. They prefer to walk from store to store picking up nice food for dinner. They also don’t tend to watch a lot of television. They might go for a walk or swim after dinner instead. Another great slimming tip from French women is they love to make love. So after having a nice dinner of bread (a tiny bit), filet mignon (about the size of your palm) and red wine (only a glass or two!), have a roll in the hay with your lover instead of watching the next episode of Sex and the City. You’ll burn calories, rekindle the romance and resist the temptation of snacking while sitting around being bored. This way of eating is not the traditional way an American thinks of a diet. Don’t try to shed 20 pounds in one month. This is unrealistic, difficult and hard to keep off. The pounds will come off soon enough if you watch your portions and start walking. And besides, the South Beach Diet may take off the pounds in a month, but it’s sure going to feel like a lot longer than that.
